Somewhere between a classic margarita and a slice of lemon meringue pie, this cocktail was born.
It’s sweet, it’s tangy, it’s got a luxe tequila kick and best of all, it comes with a crunchy, zesty, meringue-crusted rim that makes every sip feel like a full-on dessert experience.
INGREDIENTS
Serves 2
- 2 tbsp lemon zest
- 1 tsp salt
- 8 mini meringues
- Ice
- 1/3 cup fresh lemon juice
- 1/4 cup simple syrup
- 90ml Cointreau Liqueur
- 60ml Reposado Patron Tequila
METHOD
- Crush the magic: In a mortar and pestle, crush together salt, lemon zest, and half the mini meringues. Transfer to a plate.
- Rim it right: Rub a lemon wedge around the rim of two serving glasses, then dip into the crushed meringue mix for a sweet-salty crunch.
- Shake it up: Add lemon juice, simple syrup, Cointreau, tequila, and ice to a cocktail shaker. Shake until chilled and well combined.
- Serve & garnish: Strain into the prepared glasses, top with remaining mini meringues, and finish with a lemon wheel. Sip immediately and enjoy!
