The Lemon Meringue Margarita

Somewhere between a classic margarita and a slice of lemon meringue pie, this cocktail was born.

It’s sweet, it’s tangy, it’s got a luxe tequila kick and best of all, it comes with a crunchy, zesty, meringue-crusted rim that makes every sip feel like a full-on dessert experience.

 

INGREDIENTS

Serves 2 

  • 2 tbsp lemon zest  
  • 1 tsp salt  
  • 8 mini meringues 
  • Ice  
  • 1/3 cup fresh lemon juice  
  • 1/4 cup simple syrup  
  • 90ml Cointreau Liqueur  
  • 60ml Reposado Patron Tequila  

METHOD

  1. Crush the magic: In a mortar and pestle, crush together salt, lemon zest, and half the mini meringues. Transfer to a plate.  
  2. Rim it right: Rub a lemon wedge around the rim of two serving glasses, then dip into the crushed meringue mix for a sweet-salty crunch.  
  3. Shake it up: Add lemon juice, simple syrup, Cointreau, tequila, and ice to a cocktail shaker. Shake until chilled and well combined.  
  4. Serve & garnish: Strain into the prepared glasses, top with remaining mini meringues, and finish with a lemon wheel. Sip immediately and enjoy!
