The Clover Club Cocktail: Classic Elegance with a Raspberry Twist

This timeless drink dates back to pre-Prohibition days, sipped by Philadelphia's finest at the Clover Club—a swanky, members-only hangout for writers, lawyers, and movers-and-shakers.

It pairs the tartness of lemon with the sweetness of raspberry syrup, made lush with a silky egg white foam.  

We've put a local twist on the classic by using Black Rose Gin, a proudly South African spirit known for its bold, botanical flavour. Whether you're hosting friends or toasting to a quiet night in, the Clover Club is a showstopper.  

INGREDIENTS 

Serves 2

  • 120ml Black Rose Gin
  • 60ml raspberry syrup  
  • 15ml fresh lemon juice  
  • 1 egg white  

METHOD

  1. In a cocktail shaker (without ice), combine gin, raspberry syrup, lemon juice, and egg white. Shake for 10 seconds to build up that creamy foam.  
  2. Add ice to the shaker and give it a vigorous 30-second shake.  
  3. Strain into chilled cocktail glasses, garnish with fresh raspberries, and enjoy!  

🍸 Tip: for a non-alcoholic version, swap the gin for a botanical spirit.
