Brandy-licious Burnt Butter Ice-Cream

For brandy lovers with a sweet tooth!

Silky, boozy burnt butter brandy sauce swirled into creamy ice-cream? Yeah, we went there. And trust us, you should too.  

INGREDIENTS

Serves 6

  • 1 tub of ice cream (your choice!)  
  • 1/4 cup butter  
  • 1/2 cup sugar  
  • 1/4 cup cream  
  • 1/4 cup KWV 5 Year Brandy  

METHOD 

  1. Heat a medium saucepan over medium-high heat. Add butter and sugar, stirring until the butter browns and the sugar melts.  
  2. Pour in the cream and let the mixture bubble and thicken.  
  3. Remove from heat, stir in the brandy, and set aside to cool (if you can wait that long).  
  4. Let the ice cream soften slightly, then drizzle in the burnt brandy butter sauce. 
  5. Use a knife or chopstick to swirl it in—don’t mix too much, we want those caramel ribbons!
  6. Serve with an extra drizzle of sauce because *why not?*  

Pro tip: You can swirl the caramel into the whole tub or just a portion if you want to keep things civilised (but why would you?).
