INGREDIENTS
- 9 chocolate cupcakes
- 1/3 cup Baileys Irish Cream Liqueur
- ½ cup powdered sugar
- ¼ cup cocoa powder
- 1/3 cup dolce de leche
- 1/4 cup Baileys Cream Liqueur
- Edible decorations
METHOD
- Remove the icing from the cupcakes and place in a separate bowl.
- Add Baileys, powdered sugar and cocoa powder together. Note: the mixture must be thick enough to ice back onto each cupcake so adjust the ingredients added to ensure it's stiff enough.
- In a separate bowl, mix the dolce de leche and Baileys together. Transfer to a piping bag or Ziplock bag and snip the corner.
- Using a large straw or knife, make a hole in each cupcake, enough space to add a generous amount of filling. Fill each cupcake with the dolce de leche, followed by the chocolate icing and festive decorations.
- Allow to set for 1 hour in the fridge. Enjoy!
