Spiked Lemonade

At the time of going to print, spring has just sprung! But, heck, we'd drink this Spiked Lemonade on a winter's afternoon. It's just too damn easy to make and too much of a crowd-pleaser not to.

It's simple enough to smash out in a few flicks of the wrist, but also versatile: dress it up with wacky-shaped ice blocks in different colours, up-size the recipe for a pool of punch that's sure not to last, or chuck it in jugs for the dinner table.

Ingredients

Serves 4

For the Spiked Lemonade:

  • 1/4 cup brown sugar
  • 235ml water
  • 1 tbsp lemon zest
  • 180ml cup fresh lemon juice
  • 180ml cup Smirnoff Vodka
  • Ice cubes

For the Sugar Rim:

  • ¼ cup castor sugar
  • 2 tbsp lemon zest

Method

  1. Add the sugar and water to a small saucepan and simmer on medium-high heat until the sugar has dissolved.
  2. Remove from the heat and allow to cool.
  3. In a shaker, add the sugar-water mixture, lemon juice, vodka, and ice cubes.
  4. Shake until well combined.
  5. In a small bowl or saucer, add the castor sugar and lemon zest together and mix. Moisten the rim of the glass using half a lemon or lemon rind and dip it in the sugar-lemon zest mixture.
  6. Add ice to your glass and strain the lemonade mixture into the glass. Garnish with lemon slices. Enjoy!
