Summery, boozy, and a crowd-pleaser of note, our Margaritas Tres Leches recipe is sure to hit the spot whether you're craving a cake or Cuervo.
Made with Nomu's fool-proof baking kit, you can trust that as long as you stick to the recipe it's pretty impossible to flop!
🌟INGREDIENTS🌟
Makes 16 Squares
For the sponge:
1 NOMU Vanilla Cake Mix
3 eggs
160g salted butter, melted
1/2 cup Jose Cuervo Gold Tequila
1/4 cup lime juice
1/4 cup milk
Salt
For the icing:
NOMU Icing
3 tbsp lime juice
1/4 cup milk
1 tbsp lime zest, separated into two parts
For the garnish:
2 limes, sliced
1 cup whipped cream
🌟METHOD🌟
1. Preheat oven to 170 degrees Celsius.
2. Add eggs and NOMU castor sugar to a large bowl. Whisk until fluffy and pale in colour.
3. Add tequila, lime juice, and milk. Whisk until combined.
4. Add NOMU flour and a good pinch of salt. Whisk gently until just incorporated.
5. Pour batter in a prepared 9x9 baking tin. Bake for 45-55 mins.
6. Remove from the oven and gently rest upside down onto a clean cutting board for 15mins. This will allow the surface of the cake to become more level.
7. Mix together the icing powder, lime juice, and milk.
8. Poke holes in the cake using a toothpick. Gradually pour the icing over the slightly warm cake. Try as much as possible to not let too much of the icing drip off the sides as you want it to soak into the sponge. Finish off with half of the lime zest.
9. Allow to fully cool in the fridge for 1-2 hours.
10. Once fully cooled, top with dollops of the whipped cream and lime zest. Slice as desired and place a thin slice of lime on top of each square. Enjoy!
