It’s a kid’s birthday party, a bake sale, a hot summer’s day, a depressive episode in July – who cares what the occasion is when our Choc Chip Ice-Cream Sandwiches are on the menu?
They’re easy to make (definitely get the little ones involved!) and give grandma-made-‘em nostalgia with a contemporary twist. Think: Cadbury’s Giant Buttons as choc chips and ice-cream made with Nestlé Condensed Milk.
Ingredients
Serves 12 cookies
For the Choc Chip Cookies:
- 1/2 cup Huletts Brown Sugar
- 1/2 tsp salt
- 1/2 cup melted butter
- 1 I Like Eggs Free-Range Egg
- 1 tsp Nomu Vanilla Essence
- 1 1/4 cups Eureka Mills Cake Flour
- 1/2 tsp baking soda
- 200g Cadbury Giant Buttons
For the home-made ice-cream:
- 2 cups Clover Cream
- 385g Nestlé Condensed Milk
- 1 tsp Nomu Vanilla Essence
Directions
For the ice-cream:
- Add the cream, condensed milk, and vanilla essence together and whisk until incorporated. Pour mixture into a deep dish that's been lined with baking paper. Cover with cling wrap to prevent ice crystals to form on the surface. Freeze for 6 hours or overnight.
For the cookies:
- Add the sugar, salt, melted butter, and vanilla essence into a large bowl and mix. Add the cake flour and baking soda and mix well.
- Add the chocolate and mix (you can roughly chop the chocolate, if you'd like). Cover and refrigerate for 30mins.
- Preheat the oven to 180 degrees celsius. Remove the cookie dough from the fridge and form balls that weigh about 70g each. Prep a baking tray with baking paper and place each cookie ball 10cm apart from the other. Lightly flatten each cookie with your hand and immediately place it in the oven. Bake for 12 minutes.
- Allow the cookies to cool fully and remove the ice cream from the fridge. Sandwich a scoop of ice cream between two cookies and place in the freezer overnight.
- Remove from the freezer and enjoy!
