Appel Jagters Rum. Banana Foster

Have you ever tried a classic banana foster with a South African twist? If not, you're in for a treat!

The killer combination of caramelised bananas, buttery rum sauce, and a touch of local flavour delivered by Appel Jagters' intense dark rum is just *chef's kiss*

Appel Jagters is as local and lekker as they come. Developed by the Afrikaans lietdjie legend Appel in collaboration with Halewood House, it's made for the rocks, Coke, and any dark rum-calling cocktail recipe.

 

Ingredients

Serves 2

  • 1 large egg white
  • 1/4 tsp salt
  • 1/2 cup packed light brown sugar, divided
  • 1 tbsp orange zest, divided
  • 1/4 teaspoon ground cinnamon, divided
  • 2 cups pecan halves
  • 1/4 cup unsalted butter
  • 1 tsp vanilla essence
  • 1/4 cup Appel Jagters Dark Rum
  • 2 large medium ripe bananas, halved lengthwise
  • 2 1/2 scoops vanilla ice cream

Method

  1. Preheat oven to 190. Line a rimmed baking sheet with parchment paper, lightly spray with cooking spray. Set aside.
  2. Place egg white, salt, 1/4 cup brown sugar, 1 teaspoon orange zest, 1/4 teaspoon of the cinnamon in a medium bowl. Whisk to combine well.
  3. Add pecan halves, stirring to evenly coat pecans in egg white mixture. Scoop pecans from bowl using a slotted spoon, allowing excess egg white mixture to drip off. Spread in an even layer on parchment-lined baking sheet.
  4. Bake in preheated oven until pecans are lightly browned, 12 to 14 minutes, stirring halfway through baking time. Set aside, and let cool, about 20 minutes. (Pecans will not be completely crisp but will continue to crisp as they cool.)
  5. While pecans cool, place butter, vanilla essence, remaining 1/4 cup brown sugar, and 2 teaspoons orange zest in a 10-inch cast-iron skillet over medium-high.
  6. Whisk constantly until butter is melted and mixture is smooth. Cook, whisking constantly, until thickened slightly, 1 to 2 minutes.
  7. Remove skillet from heat and add the rum, and whisk until alcohol evaporates, about 1 minute.
  8. Place skillet over medium-high heat and add bananas, cut sides down, and cook until slightly softened and lightly browned, about 1 minute. Gently turn bananas, and cook 30 seconds, remove skillet from heat.
  9. Place ice-cream directly into skillet, top with the crispy pecans and serve immediately.
